Yet another eggless cake recipe super moist and very delicious Chocolate cake.. One main reason for making this cake was my Husbands's birthday and yes he loves chocolate cake. Surprised him with this chocolate cake !! Super simple recipe and so moist that we two ate this whole cake 😋😋..

Inside filling is chocolate mousse..and Icing i used the same filling and topped with chocolate Ganache.. Used some cherries to decorate and whipped cream..

Let's go through ingredients to make this yummy looking cake..

Eggless Chocolate Cake recipe by Veggierecipehouse

Eggless Chocolate Cake

Ingredients for cake:
Refined Flour - 2 cups
Milk - 2 cups
Vinegar - 2 tsp
Sugar - 1 1/4 cup
Baking powder - 1 tsp
Baking Soda - 1 tsp
Cocoa Powder - 1/2 cup
Vegetable Oil - 3/4 cup
Vanilla essence - 1 tsp 

Ingredients For Chocolate Mousse: 

Heavy whipping cream - 2 cups + 1/2 cup

Icing sugar - 2 tbsp

Vanilla extract - 1 tsp

Chocolate pieces -  225 gms

Direction for Mousse: 
  • Add 1/2 cup cream in a bowl and heat in microwave for 30 - 40 seconds don;t overheat..
  • Pour cream over chocolate pieces and set aside for 5 minutes. after that mix it really well.
  • Add cream in a deep Bowl
  • Add 1 tsp vanilla extract. Add the icing sugar and whip well until it forms soft peaks, for about 5 - 7 minutes.
  • Now add chocolate mixture and mix it gently.
  • Let it cool in fridge for 1 hour..

For the Ganache
Dark chocolate chips  -  1 cup
Whipping Cream - 3/4 cup 

Direction for Ganache: 
  • Heat cream in microwave for about 30 to 40 seconds don't overheat as it will curdle.
  • Now pour this cream over chocolate chips and set aside for 4 to 5 minutes.
  • After 5 minutes mix it really well and let this mixture come to room temperature. 
Directions for cake:

  1. Grease a cake pan and keep aside. 
  2. take milk and add vinegar mix well keep aside for later use. 
  3. Take a bowl now sieve refined flour, baking soda, baking powder cocoa and sugar now sieve.
  4. Take another bowl add vinegar + Milk mixture = Buttermilk , oil, vanilla essence. 
  5. Add dry to wet and mix well lump free mixture. pour in prepared tin.. 
  6. Bake in oven 350 f for 35 to 40 minutes. 
  7. Once done demold and  let it cool.
  8. Now cut in half using a sharp knife.
  9. Spread chocolate mousse evenly which we prepared earlier.
  10. Cover with other half and do icing with chocolate mousse.
  11. Keep in fridge until cooled.
  12. Once cooled keep cake on wire rack and keep a plate underneath so that when you pour chocolate Ganache, it collects in plate which can be used later in other recipes.
  13. Now pour chocolate ganache on top.
  14. Decorate with cherries.

Veg Macaroni Indian Style / Kids Lunch Recipe

Macaroni with vegetables is a best option for quick meal. that any body can have..made with whole wheat macaroni to make it more healthy.

One day my husband made this indian style macaroni for my kid and he really enjoyed eating. this is my husband's recipe. A quick and simple one.

I added onions and bell pepper but you are free to use any vegetable of your choice. i tried making this with pasta sauce and tomato ketch up, with both it tastes delicious.

 Perfect for kids lunch box.

Veg Macaroni Indian Style

Ingredients To Boil
  • Macaroni - 1/2 cup
  • Water To Boil
  • Oil - 1 tsp
  • Salt - 1/4 tsp 
Ingredients For Tadka 
  • Bell Pepper(Shimla Mirch) chopped - 1 small
  • Onion chopped - 1 small
  • Ginger Chopped - 1/2 tbsp
  • Oil - 1 tsp
  • Salt To Taste
  • Tomato Sauce - 2 tbsp
  • Garam Masala - 1/4 tsp 

  1. Heat water in a pan, add macaroni, salt and oil. 
  2. Boil till soft. Stir In between.
  3. Drain the water and keep aside macaroni for later use.
  4. Now in a heated pan add oil, once oil is hot add ginger and onions.
  5. Saute for 20 seconds, then add bell pepper and saute for 3 to 4 minutes.
  6. Now add salt, garam masala, tomato sauce mix and add boiled macaroni.
  7. Cook for 1 minute.
  8. Serve or pack in lunch for kids.

  • Cauliflower - 1 cup
  • Potato cubed - 1 big
  • Green Beans - 1/2 cup
  • Peas - 1/4 cup
  • Bell Pepper (Shimla Mirch ) - 1 small
  • Carrot - 1 
  • Water To Boil 
Ingredients To Grind
  • Oil - 1/2 tbsp
  • Onion Cubed - 1 
  • Ginger - An Inch
  • Garlic Cloves - 3
  • Tomatoes - 2 
Ingredients For Frying
  • Oil  - 1 tsp
  • Cashews - 6 to 7
  • Raisins - 10 to 12
  • Paneer Cubes - 1/2 cup 

Ingredients For Curry
  • Oil  - 1 tbsp
  • Cumin seeds - 1 tsp
  • Hing (Asafoetida) - a pinch
  • Garam Masala - 1/2 tsp
  • Coriander Powder - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Turmeric Powder -1/2 tsp
  • Milk Cream - 1/2 Cup
  • Salt To Taste
  • Water - 1 cup
  • Fenugreek Leaves - 1 tbsp
  • Coriander leaves For Garnishing 

  1. First Add Water in pan and boil, Add cauliflower, potato, beans and cook till half done.
  2. After that add peas and Bell pepper cook till soft.
  3. Drain and keep aside.
  4. Now in a heated pan add oil once oil is hot add onion cubes, ginger, garlic fry for 30 second, then add tomatoes.
  5. Cover and cook till soft then let it cool.
  6. Add in grinder jar and grind to puree.
  7. Now Add Oil in a pan and heat, add cashews and raisins along with paneer cubes and fry till brown.
  8. Drain On kitchen towel and keep for later use.
  9. Now in a heated pan add oil, once oil is hot add cumin seeds, hing(Asafoetida).
  10. Add rinded paste and cook till thick little bit then add garam masala, red chili powder, coriander powder, turmeric powder.
  11. Cook till oil separates and paste is thick.
  12. Then add 1 cup of water, add boiled vegetables, salt, fried nuts and paneer cubes and mix.
  13. Add milk cream, fenugreek leaves mix again and let this cook for 3 to 4 minutes.
  14. Garnish with coriander Leaves and serve with naan, paratha or roti.

Eggless Churro Recipe

  • All Purpose Flour - 1 cup
  • Hot Water - 1 cup
  • Sugar - 1/2 tsp
  • Oil - 2 tsp
  • Baking Powder - 1/2 tsp
  • Oil For frying 
  • Cinnamon - 2 tbsp
  • Sugar - 1/2 cup 
  1. Heat 1 cup of water.
  2. Heat oil in a pan for frying churros.
  3. Add All purpose flour, sugar, baking powder in a bowl and mix.
  4. Now add hot water in the mixture and mix with spoon, the dough will be thick and sticky.
  5. Now take a piping bag with 8 mm star tip nozzle. add dough in the bag.
  6. Now in the hot oil pipe about 4 to 5" length of dough and then cut using kitchen scissors.
  7. Do this in 2 - 3 batches don't overcrowd the pan.
  8. Fry on medium heat until golden brown in color.
  9. Drain and then roll in sugar cinnamon mixture.
  10. Serve warm.

Aloo Baingan / Potato Eggplant Recipe - A quick and very easy to make sabzi / Indian curry using eggplant and potato that can be enjoyed with roti and paratha in lunch or dinner..

Cooked in pressure cooker a quick method which is very helpful in rushing morning hours when you have to cook something quick for office lunch. 

This sabzi is again made with basic Indian spices and onion and tomato tadka which is the base tadka for any punjabi style cooking recipes. People who don't like eggplant like my husband, yes he don't like eating eggplant in any form that was the biggest problem in my house because i love baingan with roti and yohurt but when i made this way he actually liked because making in pressure cooker made baingan and aloo a little mushy and with onion and tomato can't identify the flavor of eggplant..

So yes this recipe is good for those people who hate eggplant. Try andshare your experience with this recipe..

Aloo Baingan 

  • Baingan ( Eggplant) - 1 Big
  • Aloo ( Potato ) - 2 Big
  • Onion Chopped - 1 Big
  • Tomato Chopped - 2 
  • Oil - 1 1/2 tbsp
  • Cumin Seeds - 1/2 tsp
  • Hing ( Asafoetida ) - A Pinch
  • Coriander Powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Salt To taste
  • Turmeric Powder - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Garlic - 4 cloves Chopped
  • Ginger Chopped - An Inch
  • Coriander Leaves for garnishing 

  1. Fist wash peel potatoes and cut into cubes.
  2. Wash baingan and remove stem and cut into cubes keep in salt water until use, this way it won't turn black in color.
  3. Heat oil in pressure cooker, add hing and cumin seeds. 
  4. Add ginger and garlic and cook for 30 seconds.
  5. Now add onions fry till soft once onion is soft add tomatoes and cook till little bit soft and mushy.
  6. Now add coriander powder, garam masala, salt, turmeric powder, red chili powder and saute for 30 seconds.
  7. Add potatoes and baingan mix and cover.
  8. Cook on medium heat for 2 whistles.
  9. Switch off heat and let the pressure go by itself.
  10. Open and add coriander leaves.
  11. Serve and enjoy.

Moong Dal Halwa

  • Moong Dal (Mung Beans) - 1 cup
  • Water To Soak
  • Water - 1/8 cup to grind Dal
  • Ghee (Clarified Butter) - 1/2 cup
  • Water - 2 cups
  • Milk - 1 Cup
  • Saffron Strands - 10 to 12
  • Sugar - 1/2 cup
  • Almonds Blanched and sliced - 5 to 6
  • Cashews - 5 to 6
  • Cardamom Powder - 1/2 tsp
  • Pistachios - 5 to 6
  • Raisins - 8 to 10 


  1. Soak Moong dal in enough water for 5 to 6 hours. After that drain the water and wash in fresh water.
  2. Add this dal in grinder jar with little water and grind to smooth paste.
  3. Now add water, milk, sugar and saffron in a pan and boil, Keep aside for later use.
  4. Now add ghee in a non stick pan let this melt.
  5. Add grinded dal and start mixing with ghee. Saute this for few minutes.
  6. After about 4 -5 minutes texture will be thick.
  7. Keep stirring and soon after about 5 to 7  it will be crumbly.
  8. Now saute till this crumbly dal turns brown in color, it will take about 10 minutes.
  9. When it turns brown add the milk and water mixture slowly and keep mixing.
  10. Add cardamom powder, pistachios, almonds, cashews and raisins.
  11. It will be thick after about 5 to 7 minutes keep stirring.
  12. When ghee starts leaving the sides then it is ready.
  13. Garnish with more almonds and pistachios. Enjoy.

Gobi Manchurian - A very Popular Indo - Chinese Recipe Served as an appetizer...It tastes Tangy and little spicy with added sauces.

Cauliflower / Gobi is cut and blanched in salt water. Then dip in batter and deep fried in oil.. For making sauce i used red chili sauce and tomato sauce, vinegar which gives spicy and tangy flavor..In addition i added soy sauce so be careful while adding salt because soy sauce also contain salt..

Gobi Manchurian Recipe 

Ingredients To Blanch Gobi
  • Gobi / Cauliflower - 1 small
  • Oil To Fry Gobi
  • Salt - 1 tsp 
Ingredients To Make Batter
  • Refined Flour - 1/2 cup
  • Corn Starch - 1/4 cup
  • Salt - 1/2 tsp
  • Black Pepper Powder - 1/4 tsp
  • Soy Sauce - 1/2 tsp
  • Water To Make Batter 
Ingredients To Make Sauce
  • Oil For Sauce - 2 tsp
  • Garlic - 1 tbsp
  • Ginger - 1 tbsp
  • Spring Onions - 1tbsp
  • Onion chopped - 1/4 cup
  • Capsicum - 1/2 cup
  • Spring onions For garnishing
  • Coriander Leaves for garnishing
  • Soy Sauce - 1 tsp
  • Chili Sauce - 1 tsp
  • Tomato Sauce - 1 tsp
  • Vinegar - 1/2 tbsp
  • Black Pepper - 1/2 tsp 
  1. Cut and wash gobi / cauliflower florets.
  2. Heat some water in a heated pan..add florets and salt let this boil for 4 to 5 minutes..then drain and keep aside.
  3. Make batter by taking refined flour and corn starch in a deep bowl.
  4. Add salt, black pepper, soy sauce add little water at a time and make pancake like batter..
  5. Add this to blanched gobhi and coat well.
  6. Now heat some oil in a pan.. dip each florets one by one and fry on medium heat till golden brown in color.
  7. Drain on paper towel.
  8. Prepare sauce by adding oil in heated pan. Now add ginger and garlic.
  9. Saute for a minute . Now add onions, spring onions, capsicum and saute for 2 minutes.
  10. Add soy sauce, red chili sauce, tomato sauce, black pepper mix well.
  11. Add fried gobi and coat well with sauce.
  12. Serve .

Bhindi Masala / Punjabi Style Bhindi Ki Sabzi / Okra Recipe

Bhindi Masala - Bhindi / Okra stir fried and then added to onion and tomato gravy.. Best side dish that goes well with roti or paratha..

Just to keep in mind a few things so that bhindi / Okra do not get slimy. Wash Bhindi / okra and then let it air dry or just pat dry with kitchen towel but it should be dry completely before cooking otherwise it can get slimy..

Stir frying it before enhances the flavor..Adding tomato is personal choice.. I do make it without adding tomatoes.. Best accompanied with Dahi / Yogurt.

Bhindi Masala

  • Bhindi / Okra - 200 grams
  • Onion chopped - 1 
  • Tomatoes Chopped - 2
  • Ginger and Garlic Paste - 1/2 tbsp
  • Oil To Fry Bhindi - 1 1/2 tbsp
  • Oil For Masala - 1 tsp
  • Cumin seeds - 1 tsp
  • Coriander Powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Red chili Powder - 1/4 tsp
  • Salt - 1/2 tsp 
  1. First rinse okra in fresh water. let this air dry completely or dry with kitchen towel, It should be completely dry.
  2. Now cut in rounds about 1/2 inch thick pieces.
  3. Add oil In a pan, once it is hot add bhindi and stir fry till soft. Drain in a plate.
  4. Now in the same pan add oil, once oil is hot add cumin seeds.
  5. Add onions and garlic ginger paste, fry for a minute.
  6. Now add tomatoes and cook till little bit soft.
  7. Add all the spices and cook for a minute.
  8. Now add bhindi and cook for 2 - 3 minutes.
  9. Switch of heat and Serve with roti or paratha.

Sponge Cake as name suggests spongy, fluffy and moist cake..This recipe is eggless version of regular sponge cake and the good thing is i have made this in pressure cooker.. 

Since i made this cake in cooker so cooker will act as a oven. For that i used regular cooking salt, spread that on the base of cooker and preheat the cooker just like oven..

Just one or two things to keep in mind you need cake mold that is oven proof and can handle the cooker heat. And to keep cake mold in cooker you need to give it some height so i placed regular stand..just keep anything of steel or aluminium to give a height...

I removed the whistle and rubber of pressure cooker before preheating, removing whistle is must so that pressure that is building inside...But removing rubber vary from cooker to cooker. i used thick bottom Hawkins brand cooker without rubber..

And first time when i used prestige cooker without rubber it didn't work on that the safety valve melted because of direct heat on the removing rubber gasket won't work on every brand cooker..


Sponge Cake In Cooker

  • All Purpose Flour - 1 1/2 cup
  • Baking Soda - 1/2 tsp
  • Baking Powder - 1 tsp
  • Oil - 1/2 cup
  • Sugar - 3/4 cup
  • Yogurt(dahi) - 1/2 cup
  • Salt a pinch
  • Vanilla Essence - 1 tsp
  • Salt To add in cooker - 1 cup 

  1. First preheat Cooker by adding 1 cup salt in pressure cooker and keep some stand or wire rack to give the height.
  2. Now remove the whistle and rubber (*Rubber removing may vary depending on cooker quality).
  3. Close the lid and preheat for 5 to 7 minutes.
  4. Now take a bowl and sieve all purpose flour, baking soda, baking powder, salt . mix and keep aside.
  5. In another deep bowl take sugar and oil beat till all well mixed.
  6. Now add oil, vanilla essence mix till fluffy.
  7. Add flour mixture and mix gently.
  8. Now pour this batter in prepared tin.
  9. Remove the lid of pressure cooker and keep this cake mold. Be careful while placing the tin cooker can be super hot.
  10. Now close the lid and cook on low heat for about 18 to 20 minutes.
  11. Check with inserting toothpick, if it comes out clean then it's ready.
  12. Let it cool then demold and enjoy.

Lapsi a gujrati sweet made with daliya (Broken Wheat ) and jaggery..One of the best and easiest sweet made in just 10 minutes..And yes healthy too..

I used pressure cooker for fast cooking but this can be made in pan also..Just add water and cook like suji halwa when ghee starting separete than it is ready..

Add nuts of your choice i used jaggery powder, thia can be substituted with sugar if you like but personally i like with jaggery more..

Lapsi / Sweet Daliya

  • Daliya (Cracked Wheat) - 1 cup
  • Jaggery Powder - 3/4 cup
  • Ghee (Clarified Butter) - 1 tbsp
  • Cashews - 5 to 6
  • Raisins - 4 to 5
  • Almonds - 4 to 5
  • Water - 3 cups
  • Cardamom Powder - 1/2 tsp 

  1. First in a preheated pressure cooker add ghee, let this melt.
  2. Add cashews, raisins and almonds fry for a minute.
  3. Add daliya and fry on medium heat till brown in color.
  4. Now add water mix and cook for 2 whistles.
  5. Switch off the heat let the pressure go by itself.
  6. Now open and see if it is cooked.
  7. Heat again and add jaggery powder and cardamom powder.
  8. Cook for 3 to 4 minutes.
  9. Enjoy

Vegetable Daliya - a healthy and quick one pot meal that can be served as breakfast, lunch or dinner.
Very healthy and nutritious recipe..

I used vegetables like green peas, carrots to make it more healthy. It can be packed in adults or kids lunch box..just skip the chili for kids. I used pressure cooker for this recipe  just add everything in and in just 10 minutes tasty daliya is ready..

Vegetable Daliya

  • Moong Dal (Yellow Moong) - 1/8 cup
  • Daliya Cracked Wheat - 3/4 cup
  • Oil - 2 tsp
  • Water - 3 cups
  • Carrots Diced - 1 small
  • Onion Chopped - 1 small
  • Peas - 1/4 cup
  • Potato Diced - 1 small
  • Salt - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Red Chili Powder - 1/4 tsp
  • Coriander Leaves for garnishing 

  1. First wash moong dal and daliya 2 - 3 times with fresh water keep aside.
  2. Add oil in a pressure cooker let it heat.
  3. Add cumin seeds, Ginger chopped Saute for 10 seconds.
  4. Add onions and fry till little bit soft.
  5. Now add potato, carrot, peas, moong dal, daliya saute for about 1/2 minutes.
  6. Add turmeric powder, garam masala, salt, red chili powder saute for 1 to 2 minutes.
  7. Now add water cover and cook for 2 whistles or till daliya is done.
  8. Switch off the heat and let the pressure go by itself.
  9. Remove lid add coriander leaves and serve.

Besan Cheela - A very light and full of nutrition. Besan is full of fiber, Vitamin, Iron and many other things that have so many health benefits and to this already healthy flour i made more healthy by adding vegetables like spinach and bell pepper.

For busy mornings and this is the best recipe which i make in my kitchen. There are two reasons first of all healthy because i used less oil and second quick and easy. Best weight loss recipe when trying to loss weight..

I added spinach and bell pepper. It can be made with adding any vegetable..I skipped adding chili but if you like, then go ahead and enjoy.

Besan Cheela

  • Besan ( Chickpea Flour ) - 1 cup
  • Oil to apply in pan
  • Turmeric Powder - 1/2 tsp
  • Salt - 1/2 tsp
  • Ginger Chopped - 1 tsp
  • Garam Masala - 1/2 tsp
  • Ajwain ( Carom Seeds ) - 1/2 tsp
  • Onion chopped - 1/4 cup
  • Spinach Chopped - 1/2 cup
  • Bell pepper Chopped ( Shimla mirch) - 1/4 cup
  • Water - 1/2 cup 

  1. In a bowl add besan, salt, turmeric powder, Garam Masala, ajwain, onion, spinach, bell pepper and ginger.
  2. Mix and add water gradually to make pouring consistency batter not too thick or not too thin.
  3. Heat a pan, Brush some olive oil.
  4. Pour a ladle full of batter and spread.
  5. Let this brown when you see bubbles on top then turn and cook from other side.
  6. when both sides are cooked take out in serving plate.
  7. Serve.

Trifle a quick dessert made with cake and fruits that has layers of cake and fruits. Custard and whipped cream can be used. In this recipe i used cake, fruits custard and whipped cream.

 This recipe is perfect for a party or big gathering..

Each layer of cake is topped with fruits and custard followed by whipped cream. i used pineapple juice to soak sponge cake little bit, but any fruit juice is can be made without custard but i like adding it in my recipe..

Any fruit can be used..and it can be prepared a day in advance...tastes absolutely delicious even after a day..

Trifle Pudding

  • Sponge Cake Cut into pieces
  • Pineapple Juice - 2 tbsp
  • Custard Pudding - 1 cup
  • Blueberries - 1/4 cup
  • Pineapple chunks - 2 tbsp
  • Mango cut into pieces - 1 
  • Strawberries - 4
  • Whipped Cream - 1 cup 

  1. In a glass add layer of sponge cake in the bottom.
  2. Then pour some pineapple juice, Add fruits pineapple, bluberries, mango, strawberries.
  3. Add a thick layer of custard pudding.
  4. Swirl some whipped cream on the top, Add a second layer of cake.
  5. Again repeat adding fruits layer then custard and lastly whipped cream.
  6. Top with strawberry piecec and blueberry.

Mother's Day Recipe

  • All Purpose Flour - 1/2 cup
  • Whole Wheat Flour - 2 tbsp
  • Milk - 1/4 cup
  • Vanilla Essence - 1/2 tsp
  • Sugar - 2 tbsp
  • Water - 2 tbsp 
  • Baking Powder - 1 tsp 
  1. Add All Purpose flour, whole wheat flour, baking powder. Mix.
  2. In another bowl add sugar, vanilla essence, milk. add this mixture to dry mixture. 
  3. Start mixing gently if it is too thick add water little by little. Consistency should not be too thick or not too thin.
  4. Let it rest for 5 minutes.
  5. Then add this in a Squeeze bottle.
  6. Heat a tawa or pan. add few drops of oil and start writing I  ♥  MOM.
  7. Turn and cook from other side.
  8. Serve with fruits and honey.

Ingredients For Sandwich
  • Bread Slices - 2
  • Mint Chutney - 1 tbsp
  • Butter - 1 tbsp
  • Cucumber slices - 4
  • Shredded Carrot - 1 small 
  • Salt To Taste
  • Black Pepper Powder - A pinch 
  1. Cut the sides of bread slices.
  2. Spread butter on slices evenly.
  3. Now spread mint chutney on both the slices.
  4. Place cucumber and shredded carrots on one slice and sprinkle salt and black pepper powder.
  5. Cover with the other slice and cut in four equal parts.

Ingredients For Aloo Salad 
  • Potato (Aloo) - 1 Boiled and cut into cubes
  • Yogurt (Dahi) - 2 tbsp
  • Black Pepper Powder - A pinch

  1. First place boiled and cut potato cubes into a bowl.

With every Parent one thing is very common, making their kids eat healthy stuff. Even i am in the same boat struggling each and every day to feed my kid healthy food. In kid's everyday diet grain, vegetable, fruits, and nuts are very important to include.

When we were kids my mom used to make Roti ladoo, very healthy and nutritious with added ghee (Clarified Butter) and nuts like almonds and cashews.  These nuts have many health benefits like almond is a good source of fiber, protein, vitamin e, And cashew contains vitamins,minerals and a good source of iron too.

So In today's lunch box i packed Roti Ladoo, Cucumber Slices, Grapes and Almonds and Cashews.

*Younger kids can't chew nuts so pack any other food instead of nuts.

Paneer Roll - This easy and quick recipe can be a lunch box dish for your kid..Personally i like this paneer roll as a snack with my evening tea. Any body can have these paneer rolls whether kids or adults.

As this is for kids i did not use any chili even my my kid he don't like, spices can be adjusted accordingly. And i try to give my toddler a portion of fruits, veggies, protein and grains..So this lunch box has yam, blueberries, grapes, pear, paneer, bread..

Paneer Roll For KIds Lunch Box

  • Brown Bread Slices - 2
  • Cottage Cheese ( Paneer ) Shredded - 1/2 cup
  • Garam Masala - 1/4 tsp
  • Salt - 1/4 tsp
  • Black Pepper Powder - 1/4 tsp
  • Coriander Leaves As Needed
  • Milk - 2 tsp 
  • Oil To Brush Pan 
  1. First Add Paneer, Garam Masala, salt, black pepper, coriander leaves in a bowl.
  2. Add milk if paneer is dry, this is just to bind the paneer in bread.
  3. Now cut the sides of bread and roll out very thin using a rolling pin.
  4. Place a tbsp of fillig in the bread in one side.
  5. On the other side apply some water.
  6. Start rolling and closing the bread from one side make sure filling stays in while closing.
  7. Pinch the edges where water is applied.
  8. Now brush some oil in a heated pan, place the bread rolls.
  9. Lightly toast from all sides.
  10. Serve.

Masala Suji Idli - Suji (Semolina) Idli is easy and quick to make on busy days When you ran out of dosa - Idli Batter And your kid loves Idli..This happens with me sometime..The day i m ran out of my batter only then my kid wants idli.

So this quick fix will save you that time. And suji idli is one of my favorite and of course my kid also loves. The texture is so soft and spongy that if you make first time you are going to love it.

I added shredded carrots and Peas in Idli as this is a great way to give vegetables to kids. In this lunch box i added two cute Fruit Kebab with strawberry and grapes i cut paneer cubes and added that to give an extra potion of protien.

Masala Idli For Kids Lunch Box

  • Suji (Semolina) - 1/2 cup
  • Oil - 1 tsp
  • Mustard Seeds - 1/2 tsp
  • Curry Leaves - 3 to4
  • Yogurt ( Dahi ) - 3 tbsp
  • Water To Soak Suji - 1/4cup
  • Water To Steam Idli - 1 cup
  • Green Peas - 1/4 cup
  • Shredded Carrots - 1/4 cup
  • Coriander Leaves - 1/8 cup
  • Salt - 1/4 tsp
  • Water To Make Batter - 1/4 cup or as neede to make thick batter
  • Oil To brush Idli Mold 

  1. First add oil in a heated pan. Once oil is hot add mustard seeds.
  2. Add curry leaves and suji. Fry for 3 to 4 minutes till it changes it color lightly..
  3. Let this cool little bit.
  4. Now add yogurt in suji mixture, add water to make thick batter.
  5. Rest this for 30 minutes. More is fine.
  6. After resting time add peas, carrots, coriander leaves, salt and 1/4 cup water to make pouring consistency batter it should not be too thick or too thin.
  7. Now heat a deep pan or idli steamer, add water and preheat
  8. Grease idli mold with oil.
  9. Add eno fruit salt in the idli batter as soon as you will add eno it will bubble up.
  10. Mix it gently pour a tbsp of batter in prepared mold.
  11. Place idli mold in to the steamer and cook for about 10 to 12 minutes.
  12. After 12 minutes take this out and let this cool little bit.
  13. Remove the idli and serve.

As paneer is excellent source of protein. This recipe is a quicker and much healthier version of traditional kadahi paneer recipe. i used very less oil. Use low fat milk to make paneer at home.

Kadahi Paneer Recipe 

  • Paneer Cut In To Cubes - 1 cup
  • Bell pepper ( Capsicum) - 1 diced
  • Onion - 1 diced
  • Oil - 1/2 tbsp
  • Cumin Seeds - 1 tsp
  • Garlic Chopped - 2 cloves
  • Ginger Sliced Thinly - 1/2 tbsp
  • Tomatoes chopped - 1 cup
  • Garam Masala - 1 tsp
  • Salt - 1/2 tsp
  • Turmeric Powder - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Coriander Powder - 1/2 tsp
  • Green Chili - 1 
  • Fenugreek Leaves
  • Coriander Leaves 

  1. First Add Oil in a pan. Once it is hot add cumin seeds.
  2. Now add garlic and ginger and saute for about 20 - 30- seconds.
  3. Add tomatoes chopped and cook till soft and mushy about 2 minute.
  4. Add garam masala, turmeric powder, salt, red chili, coriander powder mix and saute for a minute.
  5. Add bell pepper and onion cook till little bit soft but still crunchy, for about 2 -3 minutes.
  6. Once done add paneer cubes and cook for 1 minute.
  7. Add fenugreek leaves and coriander leaves.
  8. Serve with roti, paratha or naan.

Lemon Rice 

  • Rice - 1/2 cup
  • Water To Boil Rice - 1 cup water
  • Oil - 1 tbsp
  • Salt To Taste
  • Red Chili Whole - 2 no.
  • Turmeric Powder - 1/2 tsp
  • Curry Leaves - 6 to 7
  • Coriander Leaves for garnishing
  • Urad Dal (Black split lentils without cover) - 1/2 tbsp
  • Chana Dal (Bengal Gram) - 1/2 tbsp
  • Peanuts - 12 to 15
  • Mustard Seeds - 1 tsp
  • Lemon Juice - 1 tbsp
  • Ginger Chopped - 1/2 tbsp 

  1. First rinse and soak rice for 15 minutes.
  2. After that boil water and cook rice for about 15 minutes. Do not overcook, if there is excess water left strain the rice. keep aside.
  3. Start with tempering Add oil in a pan let it heat up.
  4. Once oil is hot add mustard seeds, urad dal, chana dal roast till little bit brown.
  5. Now add peanuts, red chili, ginger fry for 10 seconds
  6. Add turmeric powder and saute.
  7. Add boiled rice, salt, and lemon juice mix and saute for about 1 - 2 minutes.
  8. Garnish with coriander leaves.

Mah Chole Dal / Chana Urad Dal by whatever name you call this dal recipe. It tastes super delicious and yummy. Back In India we used to go in temple, there we used to have this dal as Langar (Parshad).That's why this is also known as Langar Wali Dal...

This is one of my family's favorite dal. I make it more often. This dal goes well with rice and roti. But i personally like with rice.

It's texture is super creamy and thick but This has tendency to get more thick when cooled so you can add more water and boil it again for next use.

Chana Urad Dal | Langar Wali Dal

Ingredients To Cook Dal
  • Urad Dal (Black Split Lentils) - 1/2 cup
  • Chana Dal (Split Bengal Gram) - 1/2 cup
  • Water - 3 1/2 cup
  • Water To Soak
  • Salt - 1/2 tsp
  • Turmeric Powder - 1/2 tsp
Ingredients for Tempring ( Tadka)
  • Oil - 1 1/2 tbsp
  • Bay Leaf - 1
  • Cumin Seeds - 1 tsp
  • Onion Chopped - 1
  • Tomatoes Chopped - 2
  • Ginger chopped - 1/2 tbsp
  • Garlic Chopped - 1/2 tbsp
  • Turmeric Powder - 1/2 tsp
  • Salt - 1/2 tsp
  • Green Chili Cut - 1
  • Garam Masala - 1 tsp
  • Coriander Powder - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Fenugreek Leaves Dry - 1/2 tbsp
  • Coriander leaves For Garnishing 

  1. First Mix both dal and soak in water for about 1 hour ( Soaking Reduces the cooking Time).
  2. Then wash and drain soaked dal, add water in pressure cooker.
  3. Add soaked washed dal along with 1/2 tsp turmeric and 1/2 tsp salt.
  4. Cover and cook for 3 whistles about 15 minutes.
  5. Now switch off heat and let the pressure go by it self.
  6.  In a heated pan add oil let this heat up.
  7. Once oil is hot add bay leaf, cumin seeds, ginger and garlic fry for 30 seconds.
  8. Now add onions and fry till onions are translucent (Soft).
  9. Add Tomatoes and cook till these are soft.
  10. Add 1/2 tsp turmeric powder, garam masala, coriander powder, red chili powder, salt 1/2 tsp.
  11. Add Cooked dal and add fenugreek leaves let this cook for 3 -4 minutes. If Dal Looks too thick add little water and cook.
  12. Switch off heat garnish with coriander leaves.

Sooji Chocolate Halwa  This halwa recipe is a variation of the traditional sooji halwa which we are known very well..A very common Indian dessert sooji ka halwa. This recipe will surely be a hit among chocolate lovers, Especially kids.

I added Cocoa powder which gives a really good color and taste to this. This can be made with chocolate just add chocolate instead of cocoa powder and skip sugar if using sweet chocolate.. Rest all ingredients will be same like sooji halwa..

Chocolate Sooji Halwa

  • Sooji (Semolina) - 1/2 cup
  • Ghee (clarified Butter) - 1/4 cup
  • Water - 2 cups
  • Cocoa Powder - 2 tbsp
  • Sugar - 1/2 cup
  • Cardamom Powder - 1/4 tsp
  • Almonds For Garnishing Sliced 
  1. First boil 2 cups of water, Once starts boiling switch off  heat and keep aside for later use.
  2. Now in a pan add ghee, once ghee starts melting add sooji.
  3. Fry Till little bit brown in color ( it will take around 6 -7 minutes on medium heat).
  4. Add cocoa powder, cardamom Powder and mix.
  5. Now add hot water slowly and stir continuously for about 3 -4 minutes.
  6. when it is thick add sugar. As soon as sugar is added it will release some water.
  7. Once again mix and let it cook till ghee separates.
  8. Garnish with sliced almonds and enjoy.
