Chena Murki Sugar coated bengali sweet made with paneer cubes. A very popular and all time favorite sweet. Preparation for this sweet is less time consuming and even easy if you already have cottage cheese prepared. If not then prepare paneer(Cottage cheese) then make Chena Murki.

Chena Murki Recipe (Cottage Cheese Candy)


Ingredients 

  • Paneer (Cottage Cheese) - 125 gm cut into small cubes
  • Sugar - 3/4 cup
  • Water - 1/3 cup
  • Milk - 3 tbsp
  • Kewra Essence - 2 to 3 drops
  • Cardamom Powder - a pinch 

Directions 
  1. First cut paneer into small cubes about 1/2 inch thick.
  2. For sugar syrup first add sugar and water in a heated pan on medium heat and bring it to boil, Reduce the heat to low and keep boiling till 1 string consistency.
  3. Now add milk and cardamom powder stir and boil till little thick.
  4. Add paneer cubes and keep mixing gently till all the syrup coats cubes well.
  5. Add kewra essence and mix.
  6. Switch off gas and keep stirring till sugar syrup is dried.
  7. let it cool and serve.

Chocolate Mousse Recipe

Today i am sharing with you all this three ingredient quick chocolate mousse. Yes it is quick you do not have to refrigerate it. This mousse is 2 servings recipe. I have made this mousse with heavy whipping cream. One main thing is to keep in mind, use chilled whipping cream it will fasten the whipping process.

If planning to serve it right away than it will be little soft. Keep in refrigerator for more firm mousse.
I have used unsweetened cocoa powder. But if you like more sweet than add sweetened cocoa powder.

Chocolate Mousse Recipe


Ingredients 
  • Chilled Whipping Cream - 1 cup
  • Sugar Granulated - 2 tbsp
  • Unsweetened Cocoa Powder - 2 tbsp
  • Bluberries or any berry for garnishing 
Directions 
  1. First Add chilled whipping cream in deep bowl.
  2. Add sugar and cocoa powder.
  3. Now with a hand mixer on low speed beat until thick, scraping cocoa powder from the sides.
  4. Optional step: If want firm mousse keep in refrigerater for 1 hour for soft mousse serve immediately.
  5. Top with whipped cream and berries and serve.

Shalgam (Shaljam) Ki Sabzi - Turnip Curry Recipe

Turnips (Shalgam in hindi) vegetable is a member of Radish family that has mild taste, this vegetable is packed with many nutrients. Many kids don't like to eat because of it's taste. when buying this vegetable select smaller one as Bigger turnips can be bitter in taste and much harder to cook. smaller (young) turnips tend to have sweeter taste.

This recipe is very simple and quick to cook in Punjabi style as it is cooked with onion and tomato. These two are main ingredients in every punjabi dish. I added spices like cumin, garam masala, mango powder and little bit sugar just to balance the tangy flavor.

let's go through the ingredients.


Shalgam (Shaljam) Ki Sabzi


Ingredients 
  • Shalgam(Turnip) - 500 gms
  • Onion Cut in pieces - 1 big
  • Tomato chopped - 1 big
  • Water 1/2 cup
  • Ginger and Garlic Paste - 1 tsp
  • Oil - 2 tbsp
  • Cumin Seeds - 1 tsp
  • Turmeric Powder - 1 tsp
  • Mango Powder - 1 tsp
  • Green Chili Cut in rounds - 1
  • Garam Masala - 1/2 tsp

Directions 

  1. First wash, peel and cut shalgam into small pieces.
  2. Add oil in a pressure cooker let this heat up.
  3. Once oil is hot add cumin seeds let them crackle then add ginger, garlic paste. saute for 10 - 20 seconds.
  4. Now add Onions and fry till brown in color then add cut tomatoes and green chili.
  5. When tomato is soft add salt, turmeric, garam masala, sugar, mango powder and cook till you see oil leaves the side.
  6. Now add chopped turnips, water and mix.
  7. Cover and cook for 1 whistle on medium heat after that lower the heat and cook for 10 minutes.
  8. After 10 minutes switch off the gas and let the pressure go by itself.
  9. Garnish with cilantro(coriander leaves).
  10. Serve with roti or paratha.

Mint and Coriander Lassi Recipe - Masala Refreshing Lassi Recipe

Mint Lassi by veggierecipehouseIn summers this cold and creamy lassi will blow your mind with it's taste. It has Mint and Coriander which gives wonderful flavors and nice aroma to this tasty drink. i added a few of spices like roasted cumin powder, black pepper and salt. For cumin powder roast it on tawa and then crush.

Lassi is very much similar to milkshakes except that this drink has yogurt and milk shake uses milk. I made lassi using blender but my mom she used to make this drink using a whisk (Madhani). it tastes great both ways.

Very Quick and refreshing drink to enjoy in a hot summer day !!


Mint and Coriander Lassi Recipe


Ingredients 
  • Yogurt (Dahi) -1 cup
  • Chilled Water - 1/4 cup
  • Mint Leaves - 5 to 6 no
  • Coriander Leaves (Cilantro) - 1/4 cup
  • Salt (Rock Salt) - 1/2 tsp
  • Cumin Seeds Powder - 1/4 tsp
  • Black Pepper Powder - 1/4 tsp
  • Dried crushed Mint for garnishing (Optional)
  • Ice cubes as required

Directions 
  1. In a blender jar add yogurt (Dahi), Ice, Water, Salt, Mint Leaves, coriander leaves , cumin powder, black pepper powder.
  2. Blend everything till leaves are pureed.
  3. Pour in a glass garnish with dried mint, cumin powder and mint leaves.
  4. Enjoy.

As Navratri is here and many people keep fast and they are busy in pooja and celebrations so they start thinking what to eat, what to cook that is quick and easy this aloo sabzi is quick and easy to do and tastes delicious.

Today i m sharing this Vrat Vaaley Aloo recipe with you all, very simple and easy to make in less than twenty minutes. In every household during navratri aloo sabzi is made. Every one makes different ways. This recipe my mother cooks during navratri time can be accompanied kuttu ki puri and dahi.

I added red chili powder if you do not use any of the recipe ingredient in navratri then skip that ingredient.

Masala Aloo Recipe (Navratri Vrat Recipe)


Ingredients 
  • Potato Boiled And Cut into Pieces - 2 no
  • Oil - 1 1/2 tbsp
  • Cumin Seeds - 1 tsp
  • Coriander Powder - 1/2 tsp
  • Ginger Paste - 1 tsp
  • Dry Mango Powder - 1 tsp
  • Red Chili Powder - 1/2 tsp 
  • Sendha Namak (Rock salt) as per taste

Directions 
  1. First Boil and cut potatoes.
  2. Add oil in a pan and let this heat up a little bit.
  3. Now add cumin seeds let this crackle 
  4. Add coriander powder and ginger paste and saute for 10 seconds.
  5. Add boiled potatoes and saute for a minute.
  6. Now add salt, red chili powder and dry mango powder saute for a minute.
  7. Serve with vrat ki roti.

Shahi Paneer No Onion No Garlic (Navratri Recipe)

Every time in navratri i make Aloo sabzi with kuttu ki puri but this time i thought of making something different. I curdeled milk and made paneer then thought of making shahi paneer.
This shahi paneer is very quick like you can make this recipe in under 10 minutes if ingredients are ready.

It is really challenging to cook in navratri because of less spices are used and No Onion, Garlic. Still i managed to make it a yummy dish. Main ingredient for this recipe is tomato puree, paneer and milk cream. i used homemade paneer. For tomato puree i first grind the tomatoes and then did microwave for 2 minutes on high.

I added red chili and coriander powder, as in our home we use these but some people don't use. So if you want you can skip these and i used sendha namak ( Rock salt) as that is used instead of regular salt. Check this link for  Navratri Rules and Vidhi

Shahi Paneer (Navratri Recipe)


Ingredients 
  • Paneer cut in to pieces - 125 gms
  • Tomato Puree - 3/4 cup
  • Milk Cream - 1/4 cup
  • Sendha Namak (Rock Salt) - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Coriander Powder - 1 tsp
  • Butter - 1/4 cup
  • Ginger Paste - 1 tsp
  • Green Chili - 1 cut
  • Sugar - 1/2 tsp 
  • Coriander Leaves (Cilantro) for garnishing
Directions 
  1. First add butter in a heated pan, 
  2. Once butter starts melting add ginger paste and cook till raw smell goes away.
  3. Now add green chili and saute for 10 seconds.
  4. Add tomato puree, cover and cook for 3 to 4 minutes on medium heat.
  5. Remove lid and add chili powder, coriander powder, cumin powder, sendha namak and sugar. Mix and cook for 1 minute.
  6. Add paneer, cream. Cover and cook for 2 minutes.
  7. Remove lid garnish with cilantro and serve with kuttu ki poori.

Maggi Noodle Rolls Recipe

Maggi Noodle bread rolls is a perfect evening snack with tea. This yummy noodle roll is great snack when some guests are coming or can be packed in kids lunch box.

Noodles stuffed in bread and deep fried in oil. Serve these scrumptious noodle rolls with chutney or ketchup.

Ingredients For Cooking Noodle (Filling)
  • Maggi Noodle - 1 small
  • Oil for cooking Noodle - 1 tbsp
  • Onion - 1 cut lengthwise
  • Water 1 1/2 cups 
Ingredients For Roll
  • Bread Slices - 4
  • Oil for deep frying 
  • Water To Soak Bread Slices 

Directions 
  1. First Cook Maggi noodle, Heat oil in pan add onion and saute till translucent. Add water, taste-maker and noodles cover and cook for 10 minutes.
  2. After noodle is cooked let it cool completely.
  3. Take one slice of bread dip this in water and squeeze out extra water from bread.
  4. Take 1 tbsp of cooked noodle, stuff in center of bread and close the bread by pinching in center like a ball.
  5. Heat oil for deep frying in a pan on medium heat. Add ready noodle balls in to hot oil and fry till golden brown.
  6. Serve with mint chutney.

Delicious and mouthwatering Aloo halwa (potato pudding) you can make on any occasion. Mostly people prepare this During Fasting as it is called phalahari dessert.

Aloo Ka Halwa (Poato Pudding) - Navratri Food Recipe



Ingredients 

  • Boiled And Mashed Potatoes - 2 Big
  • Clarified Butter (Ghee) - 4 tbsp
  • Raisins - 5 to 7
  • Almonds Sliced - 8 to 10
  • Cardamom Powder - 1/8 tsp
  • Milk - 1/2 cup
  • Sugar - 1/4 cup 
Directions 
  1. First in a pan heat ghee on medium heat.
  2. Add boiled potatoes and saute till potatoes changes color to brown. It takes about 5-7 minutes.
  3. Keep stirring. It has tendency to stick to the pan.
  4. Once ghee separates from potatoes (It will have crubly texture) 
  5. Add milk and sugar mix it really well.
  6. Add cardamom powder, Almonds and Raisins.
  7. Once again cook potato till it separate the sides of pan, It will take 3-4 minutes.
  8. Garnish with nuts.

Navratri is Hindu festival where people worship the Avatars of goddess Durga. "Navratri" means nine days and night of worshiping goddess Durga. 

Navratri comes four times in a year Out of these, two are mainly celebrated. 
  • Sharad Navratri  (September-October)
  • Vasant Navratri  (March-April)
  • Magha Navratri  (January-February)
  • Ashada Navratri (June-July)

Vasant Navratri is celebrated in the month of (March-April), Second and most celebrated navratri is post monsoon Sharad Navratri it comes in the months (September-October). In Many states of India people celebrate in different ways. People keep fast and do Jagran, Enjoy Garba. All the nine days nine Avatar of goddess "Durga" is worshiped. Shailputri, Bharmacharini, Chandraghanta, Kushmanda, Skandamata,  Kaatyayni, Kaalratri, Maha Gauri, Sidhimatri.



Food To Eat During Fasting



Flour and Rice:Singhare ka aata (water chestnut flour), Rajgira ka aata (amaranth flour), Kuttu ka aata (buckwheat flour), Samak ke chawal (barnyard millet), and Sabudana (tapioca pearls), Nariyal ka aata (Coconut flour).

Herbs and spices: Sendha Namak (rock salt), Jeera (cumin seeds or powder), Elaichi Hari And Kali (cardamon green and black), Kali Mirch (black pepper), Dalchini (cinnamon), Adrak (ginger), Mirch (red and green chili), Dhaniya (coriander leaves), Nimbu (Lemon). Aamchur (dry mango powder), Imli (Tamarind), Pudina (mint). Carom Seeds (ajwain).

Vegetables: Aloo (potato), Shakarkandi (sweet potato), Kheera (cucumber), Petha/Kaddu (Pumpkin),
Arbi/kachalu (Taro Root), Kacha Kela (raw banana). Gajar (carrot), Tamatar (Tomato).

Fruits: All fruits are eaten during fasting.

Milk Products: All milk products like milk, Paneer (cottage cheese), Dahi anything made with Paneer at home.

Desserts/Sweets: Anything that is made at home wihout using grains other than above mentioned. Sugar and Gur (jaggery), Shahad (honey) can be used.

Oil: Desi Ghee (clarified butter), Nariyal ka tel (coconut oil), Mungfali ka tel (groundnut oil) are commonly used.

*some people use Kala Namak (black salt).

Food To avoid During Fasting

  1. Gehun ka aata (wheat flour), Besan (chickpea flour), Rava/Sooji (semolina), Daliya, Maida (all purpose flour). Chawal ka Aata And Chawal (rice flour and rice), Corn Starch, Ragi, Oats.
  2. Onion, Garlic.
  3. Dal(lentils), Legumes.
  4. Namak (regular salt), Hing (asafoetida), Garam masala.
  5. Alcohol and Non Veg food and Eggs.
*some people use Haldi (turmeric), Dhaniya sabut (Coriander seeds), Rai (mustard seeds).


Guidelines, Vrat Vidhi And Pooja For Navratri fasting


Vidhi For Pooja:
  • On the very first day of navratri people clean the house and pooja mandir. people perform pooja after taking bath in morning and after sunset. 
  • Some people they keep a kalash filled with water and on top a coconut tied with red chunri in front of goddess Durga.
  • Then light a diya. Many families light diya for whole nine days, it is called "Akhand Jot" for nine days this diya is taken care of, Ghee inside this diya is filled from time to time.
  • Keep a plate filled with dry fruits or fruits.
  • Tie Moli in hands and apply red tilak on the kalash and goddess durga.
  • Then aarti is done and after that Parshad is given which includes dry fruits and fruits.


Fasting Rules:

  • Many people they keep fast for Nine days. In my family we were keeping fast in pairs like first 2 days or last 2 days. 
  • People avoid wearing black clothes during vrat.
  • Milk, Fruits, juice can be eaten whole day. But one meal during the day and that too in the evening time after doing evening aarti. people eat at one sitting.

Kanjak Pooja/Kanya Pooja
  • In many households people do Kanjak pooja on Ashtami (8th day of navratri), Navmi (9th day of navratri) and chaudash (14th day of navratri). 
  • In my family we used to get up early in morning and clean the house, No shoes were allowed in the house. 
  • Then take shower and prepare food (Poori, Kala chana and Halwa)for Kanjak pooja, the coconut which is kept in front of goddess Durga is also given as parshad to everyone.
  • Prepare pooja thali which includes Tilak, Moli and dry fruits.
  • First all prepared food is kept in front of Durga and do pooja and aarti.
  • Then young Girls and a boy are called, their feet are washed. 
  • Then apply tilak and tie Moli (Auspicious red thread).
  • All the girls and boy are given the prepared food, gifts and money.
  • After they eat food, by touching their feet blessings are taken from them. 
  • After that fast is opened by taking halwa parshad and then food can be eaten.
*Try not to clean the house after Kanjak pooja, even if the house is dirty.

Strawberry Milk Shake Recipe





When It is hot outside every body needs a cool drink. There is something so nice about homemade milkshakes. There are so many different flavored shakes available in market, But they either have high sugar amount or fake colors .

This shake recipe i wanted to do from very long time. So thought of sharing with you all. This is extremely easy to make and tastes delicious. Adding ice cream makes it thick and creamy but if you don't like ice cream can be skipped but i like adding ice cream.

Combine all the things together in a jar strawberry, milk and ice cream. Blend until puree and pour chilled shake and enjoy.

Strawberry Milk Shake Recipe


Ingredients 
  • Strawberries - 3 large
  • Milk - 1 cup
  • Strawberry Ice cream - 2 scoops
  • Strawberry Sauce (optional)
  • Whipped Topping (optional)
  • Sprinklers (optional)

Directions 
  1. Combine strawberries, Milk and ice cream in a blender jar and blend until puree.
  2. Dip glass rim in strawberry sauce and then sprinklers.
  3. Pour prepared shake in to a glass and cover with whipped topping on top.
  4. Decorate with sprinklers and enjoy.


Sooji Uttapam - Rava Uttapam Recipe









This instant suji uttapam is quick and easy breakfast, do not require any grinding or fermentation for long time. I make it more often. My toddler likes it so much that i pack for his lunch. This can be a great lunch for kids. 

For this you need fine rava (suji), water, yogurt and vegetables. I used vegetables like onion, bell pepper and tomato. Not any requirement of any kind of leavening agent.

Suji Uttapam Recipe


Ingredients

  • Suji (Semolina) - 3/4 cup
  • Dahi (Yogurt) - 1/4 cup
  • Salt - 1 tsp
  • Garam Masala - 1/2 tsp
  • Water - 3/4 cup
  • Onion Chopped - 1 small
  • Bell Pepper cut into pieces - 1 small
  • Tomato Chopped - 1 small
  • Green Chili - 1 small
  • Coriander Leaves (Cilantro) - 1/4 cup 
Directions 
  1. Add Suji, Dahi, salt, garam masala and water in a large bowl. Mix it well so that it forms thick yet runny consistency. 
  2. Keep it aside for 30 minutes.
  3. Meanwhile chop the vegetables and add in a bowl with coriander and green chili.
  4. Heat a pan, spread some oil and pour ladle full of batter and cook on low to medium heat till brown in color.
  5. Turn and sprinkle some water, cover and cook till it is brown on the other side (water to make uttapam soft).
  6. Remove the lid flip and cook for 10 seconds.
  7. Serve with chutney.

Whole Green Moong Lentil ( Moong Dal) Recipe
















Green Gram(Moong Dal) is delicious dal cooked with onion and tomato and Indian spices. Anyone can cook this dal very easy and yummy. This dal can be served with rice and roti.




Just soak dal for sometime, then boil and prepare tempering. If using pressure cooker no need to soak overnight One hour is good enough. But if not using pressure cooker then soak overnight.

 Ingredients
  • Whole Green Moong dal - 1 cup
  • Water - 3 cups
  • Tomato - 1 chopped
  • Onion - 1 chopped
  • Coriander powder - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Salt to taste
  • Turmeric Powder -  1 tsp
  • Hing (Asafoetida) - A pinch
  • Garlic Chopped - 2 cloves
  • Ginger chopped
  • Green Chili - 1cut
  • Oil - 1 tbsp

 Directions
  1. First soak moong dal for one hour in water.
  2. After dal is soaked, In a heated pressure cooker add 3 cups of water along with moong dal. 
  3. Set the heat to medium. 
  4. Add Salt, cover and cook for 2 whistles.
  5. Remove the lid and check if dal is ready. keep it aside
  6. Start making tempering for Dal (lentils).
  7. Add 1 tbsp of oil in a heated pan. Add Hing(Asafoetida), Cumin seeds let them crackle a little bit.
  8. Now add garlic and ginger saute till it changes color.
  9. Once garlic and ginger is done add onions and cook till brown in color, but don't burn them.
  10. Add Tomato, Green chili, red chili powder, Coriander powder and cook till it is mushy.
  11. Add this tempering to cooked lentils(dal) and if you want add cilantro(coriander leaves).
  12. serve hot with rice, paratha or roti.

Pizza when you hear this word, what comes to your mind? Pizza with veggies and loaded with cheese. There are many toppings for pizza in market. But i tried to do something with little Indian touch. 

I had this pizza in an Indian pizza shop and really liked the idea of adding cauliflower in pizza. So thought of giving it a try and it was a hit. 



Made with stir fried cauliflower and added pickled spices and of course main part cheese, without that pizza don't taste like pizza😋

Ingredients 
  • Gobhi (Cauliflower) - 5 to 6 big florets cut thinly
  • Mustard oil - 1 1/2 tbsp
  • Onion chopped into thin pieces - 1/2 cup
  • Shredded Mozzarella cheese - 3/4 cup
  • Pizza Sauce as required
  • Garlic Powder - 1/2 tsp
  • Achar Masala - 1 tbsp
  • Salt to taste
  • Coriander leaves (Cilantro) for garnishing

Directions 
  1. First wash and cut gobhi.  
  2. Add mustard oil in pan let it heat. Add gobhi and stir fry till little bit tender.
  3. When gobhi is done add garlic powder, achar masala and salt to taste.
  4. Mix and fry for 1-2 minutes.
  5. Let it cool completely.
  6. Place rolled pizza base on baking tray (I used homemade pizza base).
  7. Spread pizza sauce, shredded mozzarella cheese, cooked gobhi, onions, coriander leaves and more cheese on top if you like.
  8. Bake in oven for 12-15 minutes or till the crust is little bit brown and cheese is melted.
  9. Cut and enjoy.

Potato Basket Recipe



If we think of some snack with potato, then fries and cutlet comes to our mind first but there are a lots of snack one can make with potatoes. One of them is potato basket. I like to fill these baskets with Indian style bhel chaat.

Potato basket can be made both ways fried and baked. But this recipe is baked version.

Ingredients 
  • Potato Peeled and Shredded - 2 big
  • Black Pepper Powder - 1/4 tsp
  • Salt To Taste
  • All Purpose Flour - 1 tbsp 

Directions 
  1. Preheat oven to 350 f/180 c.
  2. First Peel and shred potatoes and squeeze out extra juice.
  3. Mix pepper powder, salt and flour, Mix well so that all potatoes are coated.
  4. Now spread some oil in a cupcake tin.
  5. Take small amount of potato mixture in cupcake tin and spread it to the sides making a hollow in the center like a bowl.
  6. Now fill all the cups with potato mixture and bake for 30 minutes.
  7. After 30 minutes check with fork if it is done.

Yogurt (Dahi) Recipe



This recipe is traditional way of making dahi at home. Yogurt has many health and beauty benefits. In indian kitchens it is prepared at home everyday. i prepare many dishes using yogurt.

Homemade yogurt is not only delicious but also healthy as this don't have any preservatives. It is prepared using milk and you need starter to prepare this for first time buy yogurt from market and save some yogurt for your next batch.


Yogurt (Dahi) Recipe


Ingredients
  • Milk - 2 glasses
  • yogurt (dahi) - 2 tbsp 

Directions
  1. First add milk in a pan on medium heat boil it. let this come to a complete boil.
  2. Let the milk come to lukewarm temperature.
  3. Then add 2 tbsp of yogurt mix well.
  4. Cover and wrap in towel or cloth and keep in warm place for about 8 hours undisturbed
  5. After 8 hours check if it is done just open the cover and check, if not done keep for more hours.
  6. After it is ready keep in fridge for at least an hour so that it gets thick and creamy.


Tip:
  • Resting time may vary depending on the weather.
  • If making yogurt for first time then for starter you have to buy yogurt from market.
  • For next batches keep some yogurt.

Gajar Aloo Matar (Green peas,Carrot and Potato) Recipe


This is very easy and quick to cook recipe. Dry Sauted Potato and Carrot with green peas and a few of spices are added to enhance the flavor of the dish.

This is another recipe my mom used to cook in winters because of red carrots were only available in winters in India. Serve with Roti or paratha, can be accompanied yogurt.

Gajar Aloo Matar (Green peas,Carrot and Potato) Recipe


Ingredients 
  • Gajar (Carrot) Chopped - 2 cups
  • Potato diced - 1 cup
  • Green Peas (frozen) - 1 cup
  • Oil - 2 tbsp
  • Hing (Asafoetida) - a pinch
  • Cumin Seeds - 1 tsp
  • Ginger chopped - 1/2 tbsp 
  • Turmeric Powder - 1 tsp
  • Red Chili Powder - 1/2 tsp
  • Garam Masala - 1 tsp
  • Salt To Taste
  • Coriander leaves for garnishing  

Directions 
  1. Heat oil in a pan. Once hot add Hing, cumin seeds and saute them.
  2. Add Ginger cook till raw smell goes away. 
  3. Add Salt, red chili powder, Turmeric powder and Saute.
  4. Now add Carrot and Potato Saute for a minutre. (If using fresh Peas then add this time and cook).
  5. Cover and cook for 10 minutes, stirring in between.
  6. Once done remove the lid and add peas and garam masala, saute for 2-3 minutes.
  7. Garnish with coriander leaves (cilantro).

Masala Bhindi Recipe (Okra) - Bhindi ki Sabzi Recipe



Bhindi(Okra) is cooked in many ways in India. Some people add tomato, some cook gravy one But this recipe is dry Bhindi Masala. Very easy and quick to make.

Sometimes when cooking bhindi there are a few things to keep in mind The main thing to make this perfectly looking and tasting dish is drying properly using kitchen towel, otherwise it can be Slimy.

This recipe is fairly simple. Bhindi (Okra) is shallow fried and then dry spices and onion are added. Perfect dry sabzi recipe that goes along with any curry and dal as a side dish. This is served with roti and paratha.


Masala Bhindi Recipe (Okra)


Ingredients 
  • Bhindi (Okra) - 250 gms
  • Onion Cut lengthwise - 1 cup
  • Ginger and Garlic Paste - 1/2 tbsp
  • Cooking Oil - 2 tbsp
  • Turmeric Powder - 1/2 tsp
  • Garama Masala - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Dry Mango Powder (Amchoor) - 1 tsp 
  • Salt To Taste 
Directions 
  1. First wash, pat dry and cut bhindi in round pieces.
  2. Heat oil in pan and add bhindi, fry till half done.
  3. Then in the same pan add ginger and garlic paste saute for few seconds.
  4. Add onions and saute till little bit brown.
  5. Once onions are cooked and bhindi is fully done add turmeric powder, garam masala, red chili powder, salt and dry mango powder. Cook for 1-2 minutes.
  6. Serve with your favorite roti or paratha.

Fried Ice Cream Recipe


Fried ice cream If i ask anybody have you ever tried fried ice cream they just look at my face with lots of question marks..😦 So then i tell them i tried in an Asian restaurant and yes icecreams can be fried.

A few years back when i saw this dessert in the menu even i was amused. But then i tried and it was so good, crunchy and warm outside and inside was soft and cool. Then i tried making it at home and in first attempt it was a success.

This ice cream is made using eggs, then rolled in corn flakes and frying. But because we do not use eggs so i used thick batter made of flour and water.

Let's get started making this yummy ice cream recipe.



 Fried Ice Cream Recipe


Ingredients 
  • Vanilla Ice cream - 2 scoop
  • Corn flakes crushed - 1 cup
  • All purpose flour - 1/2 cup
  • Water - 1/2 cup
  • Oil for frying 
Directions 
  1. Start with lining a plate with parchment paper or foil paper can be used.
  2. Scoop ice cream and place on lined plate. Pop in freezer for 2 hours or until solid.
  3. Now make a thick batter by adding flour and water keep aside.
  4. Crush corn flakes in blender.
  5. Take out ice cream from freezer and roll in batter first and then in corn flakes. you have to work quickly, It can start melting.
  6. Now return back in freezer for another 2 hours or until solid.
  7. Heat oil in a pan on medium to high heat.
  8. Once oil is hot take out ice cream balls from freezer and put in hot oil carefully and fry for 10-12 seconds.
  9. Take out in plate. Serve with whipped cream topping and chocolate sauce.


Gobhi ki Bhurji (Gobhi Keema) Cauliflower With Green Peas Recipe


In India Gobhi is available only in winter times. But here in United States this is easly available all year around. Back in India we were waiting for winters to eat this Gobhi ki Bhurji and cauliflower pickle too that my mother used to make. 

Gobhi Bhurji is very quick and easy to cook, can be served as side dish. In this recipe fine chopped cauliflower is cooked with some peas and spices.

Gobhi Keema (Gobhi ki Bhurji) Cauliflower With Green Peas Recipe


Ingredients 
  • Gobhi (Cauliflower) Grated - 2 cups
  • Green Peas (Matar) - 1/4 cup
  • Cooking Oil - 2 tbsp
  • Asafoetida (Hing) - 1/8 tsp
  • Cumin Seeds (Jeera) - 1/2 tsp
  • Ginger and Garlic Chopped - 1 tbsp
  • Onions Chopped - 3/4 cup
  • Turmeric Powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Red Chili Powder - 1/2 tsp 
Directions 
  1. First cut and wash gobhi and grate it into fine pieces, keep it aside for later use.
  2. Start with adding 2 tbsp oil in a heated pan. 
  3. Once oil is hot add hing, then add cumin seeds let them crackle.
  4. Now add chopped ginger and garlic saute for a minute.
  5. Add chopped onions and fry till translucent.
  6. Once onions are done add turmeric powder, red chili powder, garam masala. Mix and cook 1-2 minutes.
  7. Add green peas in masala and cook till green peas is soft. i used frozen one so it takes less time.
  8. Add grated cauliflower(Gobhi) and stir fry 3-4 minutes on medium heat.
  9. Add salt and mango powder(Amchoor) in gobi mix well. cover and cook for 5 minutes or till Gobi is tender but not mushy.
  10. Remove cover garnish with cilantro and serve with chapati or paratha.

Rice Kheer (Rice Pudding) With Cooked Rice And Without Condensed Milk

Kheer is one dessert that is every body's favorite. Very flavorful rich creamy texture that has milk, nuts and different flavors. It is made with boiling rice in milk served as dessert after meals.

I made this recipe using leftover plain rice. A little quick recipe for delicious dessert after meals.



Rice Kheer Recipe With Cooked Rice


Ingredients 
  • Rice - 1 cup
  • Milk - 5 cups
  • Sugar - 1/4 cup
  • Cardamom Powder - 1/4 tsp
  • Saffron Soaked in milk - 8 to 10 strands
  • Almonds Blanched and cut - 8 to 10
  • Raisins - 10 to 12
  • Pistachios For Garnishing 

Directions 
  1. Add milk in heavy bottom pan on medium heat.
  2. Add boiled rice in milk, If not using boiled rice then first boil. Mix well 
  3. Bring it to boil, keep stirring.
  4. When milk and rice has come to boil add sugar, almonds, cardamom powder and raisins.
  5. Reduce heat low to medium and cook till it is thick and keep stirring, and scraping the sides. This will take around 10-15 minutes.
  6. Once it is thick ladle into serving bowl and garnish with pistachios.

Candied Sweet Yam Recipe




I made Yam so many times in different ways But never tried candied Yam until i went to India last year at my mother's place. It was our flight back to US and i went to meet her and she offered candied Yam and i instantly asked her what is recipe?

This recipe i tried making in her way and it came out pretty well. Even my toddler liked it. Cut yams in rounds boil with sugar and little water add cardamom and done.

Let's get started.


 Candied Yam Dessert Recipe

Serving - 

Ingredients 
  • Yam peeled and diced - 2 
  • Water - 1/2 cup
  • Sugar - 1/4 cup
  • Cardamom powder - 1/2 tsp
  • Clarified butter - 1/2 tsp
Directions 
  1. Add all of above ingredients in a heated pan on medium high heat. Let this come to boil.
  2. Lower the heat cover and cook for 10 mins.
  3. After 10 minutes remove the lid and cook on high heat for 2-3 minutes and done.

Banana Ice Cream - Quick and Easy / No Ice Cream Machine Needed




Easy and Quickest ice cream without any ice cream maker. Healthy and easy way to stay cool in summer and best way to use overripe Bananas.

This recipe i made with banana only but you can experiment adding more fruits with banana and different nuts and chocolates. Just freeze banana until solid, then whip up in blender, creamy and soft ice cream is ready. If you like soft serve then try avoiding keeping in freezer again. Best color and taste when made fresh, i tried keeping for longer time it turns brown.

Let's go through the process for this creamy, gooey banana ice cream. 



Blender Frozen Banana Ice Cream ( Quick and Easy)


Ingredients 
  • Banana Ripe - 2
  • Milk - 1/8 cup 
Directions 
  1. Take ripe bananas peel and cut them in rounds.
  2. Put the bananas in airtight bag in keep in freezer for at-least 1 hour or until solid.
  3. Blend the frozen banana with milk .
  4. Keep blending, at first banana will look crumbly but then gooey and soft serve texture.
  5. Transfer it in airtight container and freeze until solid, if you want to freeze. 


Tip: 
  • Try mixing nuts, chocolates and any fruit as you like.

Eggless Chocolate Cake In A Mug Recipe



An easy, quick and delicious recipe for the times when you have craving for chocolate cake. Just add everything in a mug and microwave 2 minutes and ready to eat chocolate cake. This recipe is single serving.


Eggless Chocolate Cake In A Mug Recipe 

Serving - 1 

Ingredients 
  • All purpose flour (Maida) - 4 tbsp
  • Brown Sugar - 2 tbsp
  • Cocoa Powder - 2 tbsp
  • Baking powder - 1/4 tsp
  • Cooking Oil - 4 tbsp
  • Milk - 4 tbsp 
  • Chocolate Chunks (Optional) - 3
Directions 
  1. Add dry ingredients Flour, sugar, cocoa powder and baking powder in a mug, mix well.
  2. Add oil and milk mix well using fork.
  3. Add chocolate chunks mix and keep in microwave on high power for 2 minutes.
  4. Serve with your favorite ice cream.



Instant Malpua ( Indian Sweet Dish) Recipe



Malpua is a sweet made with khoya and dipped in sugar syrup. It is made during festival time. Every region in Indian has different style of making malpua. Some make flat pancake type Some make little bit fluffy Like pakora.

Traditionally Malpua's are made with khoya, flour and fermented. But this recipe is Quick version so i skipped adding khoya and made with maida and sooji. Taste even better when served with rabri.


 Instant Malpua Recipe 

Servings - 10 to 12

Ingredients for Malpua Batter
  • Maida (All purpose flour) - 1 cup
  • Sooji (Semolina) - 1/2 cup
  • Fennel Seeds - 1 tsp
  • Baking Soda - 1/4 tsp
  • Dahi (Yogurt) - 1/3 cup
  • Water - 1/2 cup
  • Milk - 1/2 cup 
Ingredients for Sugar Syrup 
  • Sugar - 1 cup
  • Water - 3/4 cup
  • Cardamom powder - 1/2 tsp 
Directions 
  1. Add All ingredients for malpua batter in a bowl except baking soda mix well so that there are no lumps. Add water as needed to make a pouring consistency.
  2. Keep mixture aside for 30 minutes.
  3. Prepare sugar syrup till batter is resting. Add Sugar and water in a heated pan, boil on low to medium heat stirring occasionally, It takes about 10-12 minutes to form one string consistency.
  4. Check syrup consistency by taking little bit of syrup with spatula. Allow to cool and then rub between your thumb and index finger and pull apart gently, if it forms a single thread than it is done. Keep it aside.
  5. After resting, batter will be little bit thick. Add more water as required to form pancake like batter. 
  6. Add baking soda and mix well.
  7. Heat oil in a pan on medium heat pour ladle full of batter. let it spread on it's own. When it is golden brown from edges than turn and cook from other side.
  8. When all malpua's are done Add in prepared sugar syrup and let it sit for 1-2 minutes.
  9. Drain out syrup and take out in serving plate and serve warm.

Homemade Pineapple Jam (No Pectin, No preservative) Recipe



Fresh homemade jam taste great, but it tastes more if there is no pectin and preservatives. And in freshly made jam you can adjust sugar quantity according to your liking. I make jams at home Blueberry, Strawberry and more. 

Pineapple jam i wanted to do from very long time. So finally did when my husband bought whole pineapple and and first thing came to my mind let's make jam. Tried and tested recipe with great taste. You just need three ingredients pineapple, sugar and lemon juice


Homemade jams can stay longer if cooked and stored properly, Just be careful when scoop out Never use wet spoon it can spoil all the hard work. I don't make big batches just one or two jars and these lasts in fridge for more than a month. 

Homemade Pineapple Jam Recipe


Ingredients 
  • Pineapple chopped in medium pieces - 450 gms about 1 pound
  • Sugar - 1 cup
  • Lemon juice - 1/4 tsp
Directions 
  1. First peel and core pineapple and chop.
  2. In a grinder jar grind pineapple until puree.
  3. Add this puree into a preheated pan. 
  4. Add sugar mix well and simmer. At first there will be foam on top but that is completely ok,  
  5. Keep stirring till you see puree is turning thick.
  6. Once it is thick check consistency by dropping with spatula if looks runny simmer again.
  7. Once done add lemon juice and stir for 2-3 minutes
  8. Pour this jam in cleaned jar once reaches to  room temperature.
