Arbi Masala | Taro root Curry 
This is my mother-in-law's recipe. I never had this type of sabzi before my wedding. First time i tried and really liked but was wandering like how she made whole arbi without cutting.

And one more thing when you cut this vegetable you feel some itching on hands this is normal just apply some coconut oil before cutting it will not itch. So just remove the skin, wash, fry and addonion and spices. This goes well with paratha and roti.






Arbi Masala Recipe


Ingredients 
  • Taro Root (Arbi) - 8 to 10 no
  • Oil For Frying
  • Onion Paste - 1 onion
  • Turmeric Powder - 1 tsp
  • Cumin Seeda - 1 tsp
  • Garlic chopped - 2 cloves chopped
  • Ginger Chopped - 1 tsp
  • Salt -  2 tsp
  • Dry Mango Powder - 1 tsp
  • Red chili Powder - 1 tsp
  • Garam Masala - 1 tsp
  • Green Chili - 1 chopped

Directions 

  1. First peel the skin and wash Taro root (Arbi). Wipe excess water with kitchen cloth.
  2. Now heat some oil in a pan for frying. Fry Arbi on medium high heat till golden brown in color and soft. keep aside.
  3. Add 2-3 tbsp of oil in another pan. when oil is hot add cumin seeds, Garlic and ginger and saute for 10 seconds.
  4. Now add onion paste and fry till onions are brown in color 
  5. When onion is done add turmeric, salt, garam masala, red chili powder, green chili and mango powder saute all these for 20 seconds.
  6. Now take arbi and press in your hands lightly and mix with prepared masala and saute for 2-3 minutes on low so that arbi absorbs all flavors of added spices.
  7. Now serve with roti or paratha.
