Mexican food that is loaded with rice beans and vegetables, which makes them perfect for lunch and dinner..if you are looking for comfort food then i would say this is the one. Mexican food is everybody's favorite so in my family once a week my husband and kid ask for this burrito.

This recipe is so versatile add or remove anything any veggie or any greens, remove the cheddar if you like it vegan. i used fresh ingredients in my recipe so no canned beans or corns.. Homemade is best!!

i added rice, fresh homemade salsa, beans corns and avocado with bell pepper and onions. this burrito is so healthy with using fresh ingredients and to make it more healthy use whole wheat tortilla.

You can convert this into chipotle style burrito bowl just skip the tortilla..double the quantity, Add lettuce and sauces and done your burrito bowl is ready.

Rice and Bean Burrito

Ingredients for salsa
  • 2 Small Tomatoes chopped
  • 1/2 onion chopped
  • 1/4 tsp salt
  • 1/2 lemon
  • 2 pods garlic chopped
  • cilantro handful chopped
  • 1/4 tsp salt
  • 1/4 tsp red chili powder
  • 1/4 tsp cumin powder
  • 1/4 tsp black pepper powder
  • 1/4 tsp sugar
Ingredients for cilantro lime rice
  • 2 cups cooked white rice
  • cilantro handful
  • 1/4 tsp salt
  • 1/8 black pepper powder
  • 1/2 or less lemon
Ingredients for Guacamole
  • 1 big avocado mashed in chunks
  • lemon juice
  • 1/4 tsp salt
  • cilantro
Corn And Beans
  • 1/2 cup corns boiled or frozen
  • 1 cup cooked black beans or use 1 can of beans
  • 1/4 tsp salt
  • 1/4 tsp black pepper powder
  • 1/4 tsp cumin powder
  • 1 tsp oil
  • 1 bell pepper cut lengthwise (Capsicum)
  • 1 onion sliced
1 Big Tortilla to assemble burrito
Sour Cream
Cheddar cheese


  1. prepare salsa in a bowl add chopped tomatoes, onion cilantro, chopped garlic, salt sugar, red chili, black pepper, cumin powder and lemon juice.Mix everthing and keep aside.
  2. take a bowl add 2 cups cooked white rice add cilantro, lime juice, salt, black pepper mix well, put it aside.
  3. Heat a pan add corns and beans cook 2 minutes till they are dried and left with no water if any, add salt pepper powder turn off the heat and let it cool down.
  4. prepare guacamole by slicing 1 avocado, slightly mash it leave the small chunks.
  5. Take the pan add little oil and saute bell pepper and onion till brown in color, once done put it aside.
  6. now assemble the wrap take a big tortilla, warm it both sides then on one side add 1 or 2 tbsp of all the ingredients which we prepared one by one.
  7. Add Sour cream and cheddar cheese, for vegan option skip this step 
  8. Now fold the bottom of tortilla, then fold from both sides and tightly roll tortilla until you have a perfect burrito.
