Kashmiri Rice Pulao This rice recipe is little different from my other rice recipes. because in this one i have added fresh fruits along with other spices and dry nuts, which makes it more rich in flavor and aroma.
i have added cloves,bay leaf, cinnamon is added to enhance the flavors, first the dry nuts are saute in the ghee and rice is cooked with milk and saffron, a few drops of rose essence that makes it more flavorful.
Kashmiri Rice
Ingredients
- 1 tbsp Ghee/Oil to fry nuts
- 1 cup Mixed Dry Nuts (Almonds,Cashews,Pistachios,walnuts and raisins)
- 1 Bay leaf
- 1 cinnamon stick
- 3-4 cloves
- 1 tsp cumin seeds
- 1 sliced Onion
- 4-5 green cardamoms
- 1/2 tsp Ginger Garlic Paste
- 1 tsp fennel seeds powder (Saunf)
- 1/2 cup saffron soaked In milk
- 1 cup Soaked Rice
- 1 cup water
- 1 tsp salt
- 1 tbsp or more sugar
- 1/8 tsp or few drops of rose essence
- 1 apple peeled and cubed
- 1 cup pineapple chunks
Instructions
- First add 1 tbsp ghee/oil in instant pot/cooker let it melt.
- once melted add all the dry nuts and cook till changes color.
- take then out in a plate.
- now add 1 tbsp more ghee/oil
- add cinnamon stick, bay lead, cloves, cumin, cardamom saute few seconds.
- add onion and fry till changes color.
- now add wahed and soked rice.
- add saffron soaked in milk alongwith 1 cup water.
- after that add salt, sugar, rose essence, saunf powder give it a quick mix.
- cover the lid and cook for 6 minutes.
- after that switch off the heat and let the pressure go by it self
- let it rest for 10 minutes.
- after 10 minutes open the lid and fluff the rice.
- now add fried nuts, tutti frutti, apple, pineapple.
- take out in plate and garnish with pomegranate seeds.
